Welcome to Restaurante Teosinte, located in the privileged Zona Azul of Nicoya, Guanacaste, on the high mountains of Zaragoza. Join us and enjoy the authentic flavor of the high mountains of this privileged blue zone. Previously known as Sabor de la Montaña, we have changed our name to Restaurante Teosinte for this season due to a legal claim on the previous name. Although the name has changed, our love and commitment that have always characterized us remain stronger than ever, ensuring that our essence remains intact. It is our commitment to offer you an authentic culinary experience, rooted in the history and culture of our land. The name Teosinte comes from the wild ancestor of corn (Zea mays L.), a plant that appeared over 8,000 years ago and was the basis for the modern varieties of corn that perfectly combines with the corn fruit that has our original logo and that we love and identify with. This grain, vital for the development of pre-Columbian cultures, was used by the Chorotegas, one of the most important indigenous cultures of Costa Rica, especially in the Nicoya Peninsula. The Chorotegas not only cultivated and consumed teosinte, but they also integrated it into their daily diet as a staple food. Teosinte, with its small, hard grains, was toasted and ground to create rustic flours that were then used to prepare tortillas, atoles, and other essential foods. Over the centuries, this plant was domesticated and transformed into the corn we know today, but its importance in the Costa Rican indigenous diet remains a symbol of our rich agricultural and cultural heritage. By choosing the name Restaurante Teosinte, we want to pay tribute to these indigenous roots and the legacy of the foods that for generations have nourished the inhabitants of our region, and with which we are proud to continue preserving.
